Saudi Champagne recipe

Saudi Champagne

Ingredients
  1. juice 6 lemons
  2. 75g caster sugar
  3. 2 apples
  4. 2l good quality apple juice, chilled
  5. 1l sparkling water, chilled
  6. mint leaves, from a large bunch
Method
  1. Stir the lemon juice and sugar in a small saucepan over a low heat until the sugar dissolves. Leave to cool.
  2. Halve and core the apples and cut into small chunks. Mix the juice, water and lemon syrup together and add the apples and the mint (tear some of the mint leaves and keep others whole). Add ice if you like, pour into glasses and serve.
