Mojito and Delicious Chicken Pot Pie recipes

Mojito
    1/2 teaspoon confectioners' sugar
    1/2 lime, juiced
    1 sprig fresh mint, crushed
    1/2 cup crushed ice
    2 fluid ounces white rum
    4 fluid ounces carbonated water
    1 sprig fresh mint.

Directions
    In a highball glass, stir together the confectioners' sugar and lime juice. Bruise the mint leaves and drop into glass. Fill glass with crushed ice and pour in rum. Pour in carbonated water to fill the glass. Garnish with a sprig of mint.

Delicious Chicken Pot Pie

1 cup potato, diced
1 cup onion, diced
1 cup celery, diced
1 cup carrot, diced
1/3 cup melted margarine
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
4 cups chicken, cooked and chopped
2 pie crusts (either store bought or your own recipe)

Directions:
Preheat oven to 400°F.
Saute onion, celery, carrots and potatoes in margarine for 10 minutes.
Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.
Combine broth and half and half.
Gradually stir into vegetable mixture.
Cook over medium heat stirring constantly until thickened and bubbly.
Stir in salt and pepper; add chicken and stir well.
Pour into shallow 2 quart casserole dish and top with pie shells.
Cut slits to allow steam to escape.
Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

Mojito recipe and cherry octopus pie

Mojito

Ingredients

    1 tsp white sugar
    a good squeeze of lime or lemon juice
    a handful of mint sprigs, (don't cut off the stalks as these contain essential oils vital for the flavour of the drink)
    ice
    soda water, to serve
    50ml white rum
    a dash of Angostura bitters
    lime slices, to serve

Method

    Put the sugar in the bottom of a glass and pour the citrus juice over to just cover it. Add 2 long sprigs of mint. Muddle (gently pound) the juice, sugar and mint.
    Add ice to the top of the glass, fill the glass two-thirds full with soda water.
    Add the rum.
    Stir and add a dash of Angostura bitters.
    Top with slices of lime.
