A Fantastic Margarita recipe, burger and chicken

A Fantastic Margarita
   
    2 cups limeade prepared from concentrate
    1/2 cup pineapple juice
    1/2 cup orange juice
    2 fluid ounces tequila
    1 fluid ounce orange liqueur

Directions
    Salt the rims of 2 large margarita glasses. To do so, pour salt onto a small plate, moisten the rims of the glasses on a damp towel and press them into the salt.
    In a pitcher combine limeade, pineapple juice, orange juice, tequila and orange liqueur. Stir well and pour into the glasses, being careful not to rinse off the salt.

Cinnamon Cookies recipe, coffee, eggs, burger

Cinnamon Cookies

1 cup sugar
1/2 cup butter
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
cinnamon sugar

Directions:
In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
Combine flour, cinnamon, baking powder and salt.
Add to butter mixture.
Blend well.
Cover and refrigerate 2 hours or till firm enough to roll into balls.
Shape dough into small balls about 3/4-inch in diameter.
Roll in cinnamon sugar to coat.
Set cookies 1-inch apart on lightly greased cookie sheets.
Bake at 350° for 10 minutes or till the edges are lightly browned.
Cool slightly on pans, then remove to racks to cool completely.

Party Mimosa and Pork Chops Yum-Yum recipes

Party Mimosa

    1 (12 ounce) can apricot-mango nectar
    1 (12 ounce) can pineapple juice
    3/4 cup cold water
    1 (6 ounce) can frozen orange juice concentrate, thawed and undiluted
    1 (750 milliliter) bottle cold champagne

Directions
    Stir together apricot nectar, pineapple juice, water, and orange juice concentrate in a large pitcher until combined. Pour in bottle of sparkling wine just before serving.

Pork Chops Yum-Yum

2 -4 pork chops, 1/2 inch to 3/4 inch thick
1/4 cup chicken broth
1/8 cup honey
1/8 cup soy sauce
1 tablespoon ketchup
1/4 teaspoon ginger
1/8 teaspoon garlic salt

Directions:
Brown chops on both sides.
Place in greased casserole dish.
Mix all remaining ingredients and pour over pork chops.
Bake, uncovered, at 350 for one hour.

Sly's honey mule

Ingredients
    1½ bottles dark rum (preferably Myers)
    ½ bottle of oven-proof rum (preferably Wray and Nephew)
    15 limes, juiced
    330g Mexican honey
    300ml elderflower cordial, undiluted
    plenty of ice, crushed
    2l ginger beer
    10 cinnamon sticks

Method
    Put the first 5 ingredients into a 1½litre jug and stir. Fill 10 tall glasses with ice, then divide the liquid between each glass until each one is ¾ full. Top up with ginger beer and serve stirred, with a cinnamon stick.

Clementini

Clementini

Ingredients
    2 clementines, peeled and segmented, plus some segments to decorate
    50ml vodka
    50ml Cointreau
    a dash of orange bitters

Method
    Muddle (crush) the clementine segments in a shaker. Add the remaining ingredients and a handful of ice cubes and shake.
    Pour into a martini glass and add a segment on a stick for decoration.

Parmesan Chicken Fingers with Warm Tomato Dipping Sauce

Ingredients:
1½ pounds chicken tenders
¾ cup grated Parmesan cheese
1 (15 ounce) can tomato sauce with roasted garlic
1 Tablespoon sun-dried tomato paste
1 teaspoon dried oregano

Directions:
1. Preheat oven to 375°F.
2. Coat a baking sheet with cooking spray.
3. Combine the chicken tenders and Parmesan cheese in a large bowl and toss to coat the chicken.
4. Transfer the chicken to the prepared baking sheet.
5. Bake for 25 to 30 minutes until the chicken is cooked through.
6. Combine the tomato sauce, tomato paste and oregano in small saucepan over medium heat.
7. Simmer for 10 minutes.
8. Serve the chicken fingers with the dipping sauce on the side.

Mulled to the max wine

Ingredients
    1 bottle of red wine
    150ml Grand Marnier
    100ml brandy
    1 orange, peeled using a potato peeler
    1 lemon, peeled using a potato peeler
    4 tbsp clear honey
    3cm piece of root ginger, chopped
    1 tsp whole allspice
    1 cinnamon stick
    ½ tsp whole cloves
    ½ tsp or a couple of blades of whole mace (if you can't find it in the spice section, leave it out)

Method
    Slowly heat the alcohols in a large saucepan and gently simmer for about 10 minutes. Add the orange and lemon peels, honey, ginger and spices, then remove from the heat and let it infuse for at least 20 minutes. Before serving, reheat gently, then strain into a jug.

Chicken in Orange Sauce

Ingredients:
4 skinless boneless chicken breasts
3/4 cup orange juice
1/4 cup brown sugar
1/2 teaspoon ginger
2 Tablespoons soy sauce

Directions:
1. Combine orange juice, brown sugar, ginger and soy sauce in a microwave safe bowl.

2. Heat until just warm, about 1 minute on high.

3. Place chicken in a baking dish and cover with sauce.

4. Bake at 350 degrees F and baste with the sauce every 10 minutes until done. Serve over rice.

Bloody Mary shots with avocado toasts

Ingredients
    1 avocado
    ½ red onion, very finely sliced
    1 tomato, diced
    ½ lemon
    8 thin slices from a long, skinny baguette, toasted

Bloody mary mix
    500ml tomato juice
    ¼ tsp celery salt, find it by the spices
    1 tsp horseradish sauce
    4 tbsp vodka
    Tabasco sauce
    Worcestershire sauce
    ½ lemon, juiced


Method
    Mix together all the Bloody Mary ingredients and season, adding Tabasco, Worcestershire sauce and lemon juice to taste. Chill.
    Peel and finely dice the avocado, mix with the red onion and tomato and a squeeze of lemon juice and season well. Pile the avocado onto the baguette toasts. Serve a shot glass of Bloody Mary (give it a quick stir before you serve it) with two toasts on the side.
